Sweet-Sour Onion Dressing with Marlin

  1. Combine the marinade in a bowl, coat the marlin thoroughly and leave for 10~15 mins.
  2. And then add the cornstarch, mix to coat the marlin thoroughly.
  3. Heat the vegetable oil to 355F(180C) in a pot.
  4. Deep fry marlin in the oil until browned.
  5. Green beans, asparagus eggplant are deep fried with no coat.
  6. Drain off the oil.
  7. Arrange the marlin, deep fried vegetables, tomato in a serving plate and top with the sweet-sour onion dressing.
