Tom Collins
- 1 ounce fresh lemon juice
- 1 teaspoon simple syrup
- 2 ounces London Dry-style gin
- Soda water, to top
- Lemon wheel or wedge, for garnish
- In a cocktail shaker filled with ice, vigorously shake lemon juice, simple syrup and gin.
- Strain over fresh ice into a highball glass and top with soda water.
- Garnish with a wedge or wheel of lemon.
