Potato Egg Bake

  1. Preheat oven to 350 degrees F.
  2. Cut off the top 1/3 of a cooked potato and then make it into a boat by spooning out the insides, leaving a 1/4-inch thick shell.
  3. Place on a foil-lined baking sheet.
  4. Reserve centers for Mini Potato Puffs Recipe (see http://beingalison.com/potato-egg-bake-and-mini-potato-puffs).
  5. Bake potato shells 1 hour or until soft.
  6. The first time I tried this recipe out it wasn't soft enough to really be able to eat easily.
  7. Learn from my mistake!
  8. Take the potatoes shells out of the oven and add in 1 TBSP.
  9. of butter to the inside of each potato shell.
  10. Add 1/2 cup of cheese and 1/2 cup of chopped ham to each potato.
  11. Crack egg into potato shell.
  12. Do the same for the second potato.
  13. Try not to let the yolk break apart.
  14. Return potatoes to oven.
  15. Bake for 25-35 minutes or until the egg whites set.
