Skillet Shepherds Pie
- 1 pound Ground Beef
- 1/2 whole Onion, Diced
- 11 ounces, weight Cream Soup (may Use Mushroom, Chicken, Or Celery)
- 1 cup Water
- 1- 1/2 cup Frozen Mixed Vegetables
- 1/2 Tablespoons Salt
- 1/4 teaspoons Pepper
- 3 cups Mashed Potatoes (I'll Often Use Leftovers)
- 1- 1/2 cup Cheddar Cheese, Shredded
- In a large skillet over medium heat, brown the beef.
- When beef is almost browned, add onion and cook until they are tender.
- Drain grease if necessary.
- Then add cream soup, water, and frozen vegetables.
- Bring to a boil and cook for 5-7 minutes.
- Then season with salt and pepper to your taste.
- Cover the mixture with warm mashed potatoes.
- Sprinkle top with shredded cheddar cheese.
- Allow to cook for another 10 minutes or until potatoes are heated and cheese is melted.
- Serves 6-8.
