Sloppy Joe Stuffed Peppers
- 4 Bell Peppers
- 1 pound Ground Turkey Or Buffalo
- 1 cup Tomato Paste
- 1 envelope 3 Ounce Packet, Sloppy Joe Seasoning
- 3/4 cups Grated Sharp Cheddar Cheese
- 2 Tablespoons Chili Powder
- 1 Tablespoon Garlic Salt
- 1 Tablespoon Onion Powder
- If making your own Sloppy Joe seasoning, mix the chili powder, garlic salt and onion powder in a small bowl.
- Set aside.
- Preheat oven to 375 F.
- Put the bell peppers on a rimmed sheet pan.
- Roast the bell peppers in the oven until just charred, roughly 15-20 minutes, turning them halfway through.
- Remove pan from the oven and set it on a rack.
- Let the peppers cool before stuffing them, about ten minutes.
- Keep the oven on.
- While you are roasting the peppers, put the turkey into a skillet over medium heat.
- Once the turkey is browned and broken up, add the tomato paste and the sloppy Joe seasoning and mix to combine.
- Cut off the tops of the peppers and clean out the seeds.
- Then stuff the peppers with the turkey mixture and put them into a baking dish, standing up.
- Put the cheese on top.
- Bake at 375 F for twelve minutes.
