BBQ Pineapple Chicken Strips
- 2 quarts pineapple juice, sweeten
- 1 fresh pineapple, chucks
- 13 cup oil
- 1 tablespoon salt
- 5 lbs boneless chicken thighs, cut into 1 inch chucks
- 24 bamboo skewers, soak in water for 30 minutes
- shredded coconut
- Lightly salt the chicken piece and marinate the chicken in pineapple juice mixture overnight.
- Skewer the marinate chicken and pineapple chuck before placing onto the bbq gill.
- Plate the pineapple chicken skewer and top with shredded coconut.
