Collard Green Frittata

  1. Preheat oven to 400F.
  2. Heat oil in ovenproof 10- to 12-inch skillet over medium-high heat.
  3. Add onion, and saute 5 minutes, or until translucent.
  4. Push onion to one side of pan, and add collard greens.
  5. Cook 5 minutes, then stir together greens and onions.
  6. Stir eggs into collard mixture.
  7. Cook 5 to 7 minutes, or until edges are set.
  8. Sprinkle with Parmesan cheese.
  9. Transfer skillet to oven, and bake 10 minutes, or until egg mixture is completely set.
  10. Cut into 6 wedges.
