Collard Green Frittata
- 1 Tbs. olive oil
- 1 medium yellow onion, chopped (1 1/2 cups)
- 1 10-oz. bag frozen collard greens, thawed and drained
- 10 large eggs, beaten
- 13 cup grated Parmesan cheese
- Preheat oven to 400F.
- Heat oil in ovenproof 10- to 12-inch skillet over medium-high heat.
- Add onion, and saute 5 minutes, or until translucent.
- Push onion to one side of pan, and add collard greens.
- Cook 5 minutes, then stir together greens and onions.
- Stir eggs into collard mixture.
- Cook 5 to 7 minutes, or until edges are set.
- Sprinkle with Parmesan cheese.
- Transfer skillet to oven, and bake 10 minutes, or until egg mixture is completely set.
- Cut into 6 wedges.
