Apple Oatmeal With Flax Seeds Recipe
- 2 x Granny Smith or possibly other cooking apples peeled,cored, sliced
- 3 c. water
- 1/3 c. brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1 tsp minced candied ginger, (optional)
- 1 1/2 c. old-fashioned rolled oats
- 2 Tbsp. flax seeds, coarsely grnd
- 1 c. evaporated lowfat milk or possibly soy lowfat milk
- In a large pot, combine apples, water, sugar, cinnamon, salt, nutmeg, and ginger, if using.
- Bring to a boil over high heat, stirring occasionally.
- Add in oats and flax seeds.
- Reduce heat to medium-high and cook, stirring frequently, for 5 to 7 min, till thickened.
- Stir in lowfat milk and serve warm.
