Hearty Beef Stew
- 2 lb. beef for stew, cut into 3/4 inch cubes
- 1/3 c. flour
- 1 tsp. salt
- 1 tsp. dry mustard
- 1/2 lb. bacon
- 1 (1 3/8 oz.) envelope onion soup mix
- 3 c. water
- 1 (1 lb.) can (2 c.) tomato sauce
- 1 tsp. sugar
- 1/2 c. barley
- 1 (29 oz.) can Veg-All homestyle-mixed vegetables (including juice)
- Coat beef with flour seasoned with salt and mustard.
- Cut bacon 1 inch pieces; fry in Dutch oven.
- Remove bacon pieces; add beef to bacon drippings.
- Brown beef on all sides.
- Add soup mix and Veg-All liquid plus water to give you 3 cups.
- Cover and simmer for 1 hour.
- Add tomato juice, sugar and barley.
- Cover and simmer for 45 minutes.
- Add bacon and Veg-All home-style vegetables.
- Simmer 20 minutes.
- Serves 6 to 8.
