Creamy Tomato and Feta Linguine
- 1 lb linguine
- 1 cup canned crushed tomatoes
- 3 garlic cloves, minced
- 12 cup dry white wine
- 2 tablespoons paprika
- 12 teaspoon salt
- 2 teaspoons dried dill
- 1 cup heavy cream
- 4 ounces feta cheese, crumbled
- In a large saucepan of boiling salted water, cook linguine.
- Meanwhile, in a medium saucepan, combine tomatoes, garlic and wine.
- Cook over medium high heat until liquid reduces by one third, 4-5 minutes.
- Reduce heat to medium.
- Simmer 3 minutes.
- Add paprika, salt and dill.
- Add cream, stirring continuously until heated through, 1-2 minutes.
- Do not boil.
- Drain pasta and place in a serving bowl.
- Toss with feta cheese.
- Spoon hot sauce over pasta and serve.
