Bran Muffins Recipe
- 1 c. Flour (I use all white but the original recipe called for 1/2 white and 1/2 whole wheat)
- 2 tsp Baking pwdr
- 1/2 tsp Baking soda
- 1/2 tsp Cinnamon
- 2 c. 100% bran (I use All Bran cereal)
- 1 1/4 c. Non-fat lowfat milk
- 1/3 c. Firmly packed brown sugar
- 1 x Egg equivalent (I use Egg Beaters)
- 1/2 c. Applesauce
- 1/2 c. Dry cranberries or possibly raisins
- Here is a Bran Muffin recipe I originally got from this list about 2 years ago.
- It is the best muffin recipe I've tried without added fat!
- Heat oven to 400 degrees.
- Mix cereal, lowfat milk and sugar in bowl; let stand 5 min.
- Stir in egg equivalent and applesauce.
- Add in dry ingredients.
- Spray muffin pan with no-stick spray and fill 2/3 full.
- Bake in oven 18-20 min.
- Makes 12 muffins.
