Beef Stroganoff Recipe
- 1 lb lean, boneless top sirloin steak Vegetable cooking spray
- 3 c. sliced fresh mushrooms
- 3/4 c. minced onion
- 2 x cloves garlic crushed
- 1 tsp beef-flavored bouillon granules
- 1 c. warm water
- 1 Tbsp. reduced-calorie margarine
- 2 Tbsp. all-purpose flour
- 1/8 tsp salt
- 1/4 tsp freshly grnd pepper
- 1 Tbsp. cornstarch
- 3/4 c. plain low-fat yogurt
- 3 c. warm cooked noodles (cooked without salt or possibly fat)
- 2 Tbsp. minced fresh parsley
- Trim fat from steak; partially freeze steak.
- Slice steak diagonally across grain into thin strips, and set aside.
- Coat a nonstick skillet with cooking spray; place over medium-high heat till warm.
- Add in steak, mushrooms, onion, and garlic; saute/fry till steak and vegetables are tender.
- Drain; wipe drippings from pan.
- Combine bouillon granules and warm water; set aside.
- Heat margarine in skillet over low heat; add in flour, stirring till smooth.
- Cook about 1 minute; stir constantly.
- Gradually add in bouillon mix; cook over medium heat, stirring constantly with a wire whisk till thickened.
- Stir in salt, pepper, and steak mix.
- Cook till heated.
- Remove from heat.
- Combine cornstarch and yogurt (at room temperature); stir into meat mix (don't reheat).
- Serve meat mix over noodles; sprinkle proportionately with parsley.
