Asian Glazed Pineapple Pork Cutlets and Cilantro Brown Rice

  1. Mix together crushed pineapple, peppers, brown sugar, lemon juice and dijon mustard.
  2. Heat oil in a large skillet.
  3. Place pork cutlets into pan and cook for 3 minutes on each side.
  4. Add pineapple mixture and simmer 5 minutes.
  5. Mix together brown rice and cilantro.
  6. Place pork over a bed of rice and serve.
