Asian Glazed Pineapple Pork Cutlets and Cilantro Brown Rice
- 8 ounces crushed pineapple in juice, undrained
- 12 cup diced red pepper
- 14 cup light brown sugar
- 2 tablespoons lemon juice
- 2 tablespoons Dijon mustard
- 4 schwan's breaded pork cutlets, frozen
- 2 tablespoons vegetable oil
- 12 ounces schwan's microsteam brown rice, prepared
- 2 tablespoons fresh cilantro, chopped
- Mix together crushed pineapple, peppers, brown sugar, lemon juice and dijon mustard.
- Heat oil in a large skillet.
- Place pork cutlets into pan and cook for 3 minutes on each side.
- Add pineapple mixture and simmer 5 minutes.
- Mix together brown rice and cilantro.
- Place pork over a bed of rice and serve.
