Sauteed clams
- 1 stick unsalted butter
- 1 medium tomatoes diced
- 1/2 large red onion sliced in strips
- 2 jalapeno sliced in strips
- 6 mushrooms halved then sliced
- 4 garlic cloves minced
- 1 tbsp dried parsley
- 1/3 cup fresh lemon juice
- 1 salt and pepper to taste
- 5 lb cleaned clams
- 1 cup grated parmesan cheese
- 1 loaf crusty baguette bread toasted
- Add first 9 ingredients to large pot, simmer for about 3 minutes add clams, stir to evenly coat, cover and cook over medium high heat for 5 minutes, stir, cover and cook about 4 more minutes, discard any unopened clams.
- Place on large serving tray sprinkle with Parmesan, enjoy!
- Use bread to sop up all the yummy juice!
