Watercress Cauliflower Soup

  1. Melt butter in medium saucepan and chopped onions until tender and translucent (about 3 minutes)
  2. Add flour to onion and mix (about a minute)
  3. Add chicken broth and cauliflower florets.
  4. Let it boil.
  5. Once boiled, lower heat and let it simmer (about 15-20 mins)
  6. Once the cauliflower is tender, add the watercress.
  7. Let it cook for a minute, until watercress is wilted.
  8. Either transfer soup to blender or use immersion blender.
  9. I had to transfer it to a blender in two separate batches.
  10. Add salt and pepper to taste and blend until smooth.
