Pottzy's Chicken bombs.

  1. Trim chicken breast and score inside.
  2. Finely dice chilli and herbs.
  3. Put in bowl with garlic and butter.
  4. Mix thoroughly and add salt and pepper.
  5. Lay a strip of bacon down and place a breast on top sideways at one end skin side down.
  6. Place chicken so bacon is to one end.
  7. Spoon a generous amount of herb mix on chicken and push into the scores.
  8. Roll the breast on bacon so that bacon wraps entire breast.
  9. Push wooden skewers in to hold bacon on breast as required.
  10. Drizzle maple syrup over bacon.
  11. Place bombs in roasting tray and bake for 45 mins to an hour.
