Gwen's Cole Slaw
- 1/4 small head cabbage, cored and thinly sliced (2 cups)
- 1/4 small onion, diced
- 1/4 cup mayonnaise
- 1/4 cup sweet relish
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon Dijon-mayonnaise spread, such as Dijonnaise
- Kosher salt and freshly ground black pepper
- In a large bowl, combine the cabbage, onion, mayonnaise, relish, lemon juice, Dijon-mayonnaise spread and salt and pepper to taste.
- Chill for at least 30 minutes and up to overnight before serving.
