Tomato, Basil and Goat Cheese Bruschetta

  1. In a medium mixing bowl, add chopped tomatoes, finely minced garlic, olive oil, balsamic vinegar, and basil together.
  2. The longer they sit, the better it will be.
  3. Make a few hours ahead or overnight.
  4. Add kosher salt and pepper to taste.
  5. Toast baguettes on a cookie sheet just until slightly browned.
  6. Rub halved garlic clove over the toasted side to infuse bread with flavor.
  7. Spread with goat cheese to taste.
  8. Spoon tomato mixture on top of the bread and serve.
