Scalloped Scallops Recipe
- 1 1/2 pound Bay scallops
- 1/4 teaspoon salt
- 20 Ritz crackers
- Pepper
- Paprika
- 1/2 c. butter, melted
- 1 tbsp. chopped chives
- 4 tbsp. light cream
- Wash and drain scallops.
- Crumble crackers.
- Mix with the butter and chives.
- Arrange alternate layers of cracker crumbs and 2 layers of scallops.
- Pour cream over surface.
- Sprinkle with pepper and paprika.
- Bake at 425 degrees for 30 min.
- Serves 4.
- Also good with filet fish substituted for scallops.
