Oatmeal Whoopie Pies
- 2 cup brown sugar
- 1/2 cup butter- softened
- 1/4 cup shortening- crisco
- 2 large eggs
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 3 tbsp boiling water
- 1 tsp baking soda
- 2 1/2 cup all-purpose flour
- 2 cup Quick Oats
- 1 jar of marshmallow fluff
- Preheat oven to 350 .
- Cream brown sugar, butter, shortening together.Add eggs & mix well.
- Add salt,cinnamon, baking powder and mix well.
- Mix baking soda & boiling water together.
- Then add to your mixing bowl and mix.
- Add flour & oatmeal .
- Mix well.
- Scoop dough onto parchment lined cookie sheet.
- By rounded teaspoonfuls.
- ( I used a #40 scoop) .Bake 10 minutes.
- Mine took a little longer.
- Be careful not to burn them.
- Remove from oven & cool completely.
- Scoop a small amount of marshmallow fluff onto one cookie, top with another cookie.
- Lightly press them together.Freeze right away if not eating them right away.
