Bbq Lamb Salad With Grilled Vegetables And Goat Cheese (Gc) Recipe
- 6 x Lamb tenderloins
- 1/2 c. New Mexico Style Barbecue Sauce see * Note Salt to taste Freshly grnd black pepper to taste
- 4 c. Mixed greens
- 8 slc Goat cheese (1/4" thick slices)
- 8 x Pencil thin asparagus spears grilled
- 1 x Red bell pepper grilled, seeded, and cut in 4 pcs
- 1 x Yellow bell pepper grilled, seeded, and cut in 4 pcs
- 2 x New potatoes cooked, grilled, and sliced 1/4" thick
- Prepare a wood or possibly charcoal fire and let it burn down to embers.
- Brush the lamb with the barbecue sauce and season to taste with salt and pepper.
- Grill for 3 min on each side or possibly till done.
- Serve on top of mixed greens with grilled vegetables and goat cheese.
- This recipe yields 4 servings.
