Sarahs Pestolicious Chicken

  2. Cut the chicken into bite-sized chunks.

  4. Heat the olive oil over a low heat, add the chicken and cook gently until browned.

  6. Mix together your tub of creme fraiche, tin of tomatoes, and pesto in a jug or bowl.

  8. Pour over the chicken, bring to a boil, and then simmer until sauce has thickened (about 15 minutes or so).

  10. Add more pesto to taste if you need!
  11. I left it at a small amount, but Im a pesto fanatic, so I use lots!
  12. Serve with rice, baked potato or whatever your heart desires.
  13. And most importantly, enjoy.
