Bacon Spinach and Cream Potatoes

  1. Dice potatoes, place in pot and cover with water.
  2. Bring to a boil, add salt to water.
  3. Cook until tender (10-15 min.
  4. ).
  5. In a small skillet over medium heat, add bacon and brown (7-8 minutes).
  6. Add onions, cook until soft (5 more minutes).
  7. Drain potatoes and return to pot.
  8. Add bacon and onions, and defrosted/drained spinach; mash to combine.
  9. Add cream and EVOO; mash until smooth.
  10. Add salt, pepper, and nutmeg.
  11. Enjoy.
