Black Bean and Cranberry Burgers with Chipotle Hummus
- 1 cup Homemade Bread Crumbs, From Sprouted Or Whole Grain Bread
- 2 cans (15 Oz. Size) Black Beans, Drained
- 1 whole Egg
- 1 cup Frozen Sweet Corn
- 1/2 cups Finely Chopped Bell Pepper
- 2 cloves Minced Garlic
- 13 cups Dried Cranberries
- 13 cups Grated Carrots
- 1/2 teaspoons Sea Salt
- 1/2 teaspoons Garlic Powder
- 1/2 teaspoons Onion Powder
- 1 teaspoon Turmeric
- 1 Tablespoon Extra Virgin Olive Oil, For Cooking The Patties
- 1 cup Hummus
- 3 Tablespoons Chipotle Adobo Sauce
- 6 whole Kaiser Buns
- 1 whole Sliced Tomatoe
- 1 whole Sliced Red Onion
- 6 leaves Lettuce
- 1 cup Alfalfa Sprouts
- In your coffee grinder or mini food processor, finely grind 2-3 slices of sprouted or whole grain bread.
- Set out on a plate to dry out a bit while you put everything else together.
- Tip: I make a big batch of bread crumbs and freeze in a Mason jar for convenience.
- Preheat oven to 425 degrees F.
- In a large bowl, combine all the ingredients for the burger patties, except the oil.
- Lightly oil a heavy baking pan such as a broiler pan.
- You can also fry these on a grill pan if you wish.
- Using your hands, scoop a big handful of the bean mixture into a ball and then gently shape into a thick patty.
- Place on the oiled grill pan.
- Repeat until all of the mixture is gone.
- Bake at 425 degrees F for 12-18 minutes until slightly crispy and hot.
- To prepare the chipotle hummus, mix the hummus with the adobo sauce (not the chipotle peppers).
- To assemble the sandwiches, put burgers on kaiser buns spread with chipotle hummus and layered with freshly sliced tomatoes, onion, lettuce and sprouts.
