Oyster Sausages

  1. Mix all ingredients together.
  2. Taste for seasoning, especially salt.
  3. Stuff the mixture into sausage casings and prick each sausage with a fork.
  4. Poach, uncovered, in salted water for 45 minutes; drain.
  5. Brown the sausages quickly in hot oil, and serve.
