Oyster Sausages
- 8 -10 sausage casings
- 2 cups oysters, minced
- 1 13 cups beef suet, cut into fine shreds
- 1 cup white breadcrumb
- 1 teaspoon lemon juice
- 2 eggs
- 18 teaspoon black pepper
- 18 teaspoon allspice
- 18 teaspoon nutmeg
- 1 pinch salt
- 18 teaspoon oil
- Mix all ingredients together.
- Taste for seasoning, especially salt.
- Stuff the mixture into sausage casings and prick each sausage with a fork.
- Poach, uncovered, in salted water for 45 minutes; drain.
- Brown the sausages quickly in hot oil, and serve.
