Grandma Bertie's Gluten Free Chard Wrapped Meatballs
- 1 lb bison meat
- 12 ounces fresh swiss chard
- 2 rice cakes
- 1 egg
- 1 tablespoon olive oil
- 12 teaspoon salt
- 14 teaspoon allspice
- 18 teaspoon nutmeg
- 1.
- Crush rice cakes.
- 2.
- In a large bowl, mix all ingredients together, by hand.
- 3.
- Remove large stems from the chard.
- 4.
- Make eight meatballs
- 5.
- Wrap each meatball in a chard leaf.
- 6.
- Heat a frying pan with the 1 TBSP oil.
- 7.
- Cook meatballs, covered, for 30 minutes or until done.
