Chili Marinated Pork Tenderloin
- 1 cup Apple Juice
- 1/4 cups Fresh Lime Juice
- 1 whole Jalapeno Chili, Minced
- 3 cloves Garlic, Minced
- 1/2 teaspoons Paprika
- 1/2 teaspoons Dried Oregano
- 1/2 teaspoons Black Pepper
- 1/2 cups Sour Cream
- 1/4 cups Canola Oil
- 2 whole Pork Tenderloin (about 2 Lbs)
- Preheat oven to 350 degrees F. In a shallow casserole dish combine apple juice, lime juice, jalapeno, garlic, paprika, oregano, and pepper.
- Remove 1 tablespoon of marinade and add this to the sour cream.
- Set sour cream aside.
- Add oil to the marinade and stir to combine.
- Add pork tenderloins and allow to marinate at room temperate for 30 minutes.
- Place tenderloins in a roasting pan and bake for 3035 minutes until pork reaches at least an internal temperature of 155 degrees F. Remove from the oven and let rest about 10 minutes.
- Slice and drizzle sour cream mixture over the top.
- Serve with extra sour cream mixture.
