Seafood Ala Luciano Recipe
- 3 lbs. mussels (live) wash in salt/lemon water, remove bears
- 12 to 15 hard shell clams (live), scrub and wash in salt/lemon water
- Salt
- 1 c. extra virgin olive oil (imported)
- 2 lbs. octopus (clean, rinse and lb. flat)
- 2 lbs. shrimp
- 1/2 c. lemon juice
- 2 teaspoon mustard
- 1 clove garlic
- Parsley (fresh)
- Salt and grnd pepper
- Pour 3 Tbsp.
- oil in large pan.
- Add in mussels, clams and garlic.
- Cover and cook high for 10 to 12 min.
- When shells open, take out fish, reserving the liquid.
- Strain liquid, set aside.
- Octopus in large pan add in liquid from above.
- Cook gently for 2 hrs.
- Add in shrimp, cook 10 more min.
- Take octopus and shrimp from pan.
- Shell shrimp and cut octopus in small pcs.
- Put all shellfish together in a pretty bowl.
- Mix extra virgin olive oil with lemon juice, mustard, parsley, garlic, salt and 2 sprinklings of pepper.
- Pour dressing over seafood, mix lightly.
- Set aside for 2 hrs and serve cool.
