Asparagus Spamelt Recipe

  1. Heat oven to 375 degrees.
  2. In saucepan, heat butter, stir in flour and cook till thick.
  3. Gradually stir in lowfat milk and cook till bubbly and thickened.
  4. Stir in 1/2 c. Cheddar cheese, salt and pepper.
  5. Remove from heat.
  6. Spread the 2 3/4- by 3 1/2-inch slices of Spam in bottom of a 9- by 13-inch baking pan.
  7. Put Spam in oven for 5 min to soften for easier rolling.
  8. Cook asparagus spears for 4 min.
  9. Cold slightly and place 3 spears on each Spam slice.
  10. Roll up.
  11. Fasten with a toothpick, if needed.
  12. Place in the pan.
  13. Cover with cheese sauce.
  14. Sprinkle with remaining 1/2 c. cheese.
  15. Sprinkle with crumbs.
  16. Bake uncovered for 20 min.
  17. This recipe yields 6 to 8 servings.
