Microwave-Steamed Ground Beef and Tofu

  1. Cut the ground pork and Japanese leek into small pieces.
  2. Grate the ginger.
  3. Combine in a bowl.
  4. Add the seasonings and mix.
  5. Using a spoon, scoop the tofu into a heatproof dish.
  6. Arrange so that they do not overlap.
  7. Pour Step 2 over the tofu.
  8. Rather than piling it up high, spread the ingredients out so that it heats evenly.
  9. Wrap with plastic wrap and microwave for 7 minutes.
  10. Use chopsticks to open a space in the middle and check to see if there's any red left to the meat.
  11. It's ready when the centers have cooked through.
  12. Transfer to dishes, breaking up the meat portion with the chopsticks.
  13. If the meat is still red, heat some more while keeping an eye on it.
  14. If you like it spicy, add some doubanjiang or ra-yu.
