Cuban Black Beans Recipe
- 3 c. black beans
- 2 c. onion, minced
- 2 c. green pepper, minced
- 2 or possibly 3 garlic cloves, chopped
- 2 bay leaves
- 3 teaspoon salt
- 3 teaspoon onion pwdr
- 3/4 to 1 1/2 teaspoon cumin pwdr
- 3 tbsp. lemon juice
- Cook black beans in 8 c. or possibly more of water till tender.
- Saute/fry onion, pepper and garlic in 3 Tbsp.
- of extra virgin olive oil.
- Add in to cooked beans.
- Add in seasonings except lemon juice.
- Simmer 30 min more to blend flavors.
- Serve with brown rice.
- Garnish with minced scallions and tomato wedges.
- Add in lemon juice just before serving.
