Sweet Sesame Noodles
- 1 lb whole wheat spaghetti or 1 lb soba noodles
- 14 cup low sodium soy sauce (its much too salty with regular soy sauce)
- 14 cup sesame oil
- 2 tablespoons white sugar
- 2 tablespoons brown sugar
- 1 teaspoon fresh grated ginger (ok to use powdered)
- 1 teaspoon garlic powder
- 2 tablespoons sweet chili sauce
- 14 cup sesame seeds
- 1 cup grated carrot
- black pepper
- Boil the spaghetti according to package directions, drain, and coat with a small amount of oil to keep from sticking.
- Set aside (or heat the soba noodles in a wok until tender, set aside).
- Mix the sesame oil, soy sauce, sugars, ginger, garlic powder, chili sauce & black pepper together in a bowl, whisk very well, or toss everything in a Tupperware and shake it really good.
- I like my veggies crisp and fresh, but if you want them cooked, steam them for 5 minutes.
- Toss the pasta with the sauce and vegetables, refrigerate until cold, and enjoy!
