Bakes
- 1 1/2 cups flour
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 1 tablespoon very cold butter
- 1/2 cup cold milk or ice water
- 1 to 2 teaspoons vegetable oil
- In a mixing bowl, sift together the flour, baking powder, salt and sugar.
- Cut the butter into small pieces and add to the bowl.
- Using your fingers, quickly rub the butter into the flour so that the texture is like fine crumbs.
- While stirring with a fork, gradually add enough milk or water to make a soft dough.
- Mix it together with your hands so that all the ingredients are well blended.
- Break off pieces of dough a little larger than walnuts, roll into balls, then flatten to a thickness of about a half inch.
- Very lightly oil a large cast-iron or other heavy skillet.
- Heat over a medium flame until it's very hot, then lay the bakes into the pan.
- Bake 4 to 5 minutes on each side, until the bakes are lightly puffed and golden brown.
- Serve hot.
