Rhubarb-Nectarine & Apricot Betty

  1. Preheat oven to 375 degrees.
  2. Stir together, sugar, flour and salt.
  3. Add rhubarb, nectarines and apricots, toss until well coated.
  4. Next, add two cups of bread cubes to the mixture and drizzle with 2 tbsps of melted butter and 1/2 tsp cinnamon.
  5. Mix gently and put into a 8x8 pan.
  6. Combine the remaining bread crumbs, butter, orange rind and orange juice together and pour ontop of fruit mixture.
  7. Bake in a 375 degree oven for 25 - 35 minutes.
  8. Serve warm and enjoy!
