Chorizo Migas

  1. Fry tortilla strips in oil in large skillet until golden, but not crisp.
  2. Drain on paper towels.
  3. Remove excess oil from skillet.
  4. Cook chorizo in skillet on medium heat until lightly browned; drain.
  5. Add onion and peppers; cook 2 minutes.
  6. Stir in tomatoes; cook 2 minutes.
  7. Add fried tortilla strips and eggs to skillet.
  8. Cook until eggs are almost set, stirring occasionally.
  9. Sprinkle with cheese; cover.
  10. Cook 1 to 2 minutes or until cheese is melted.
