Lime Muffins
- 2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 12 teaspoon salt
- 1 egg
- 14 cup milk
- 14 cup vegetable oil
- 3 tablespoons lime juice
- 1 12 teaspoons lime zest
- In a bowl, combine the first four ingredients.
- In another bowl, beat the egg, milk, oil, lime juice and peel.
- Stir in to dry ingredients just until moistened.
- Fill paper lined muffin cups tow thirds full.
- Bake at 400 for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before removing from pan to a wire rack.
