Strawberry Poppy Seed Salad
- 1 head romaine lettuce, torn into bite-sized pieces
- about 24 strawberry, sliced
- 1 (8 ounce) can mandarin oranges
- 1 (8 ounce) cansliced pineapple
- 1 14 cups fresh blueberries
- 14 cup pecans or 14 cup almonds, roughly chopped
- 12 cup reserved juices, from pineapples
- 13 cup reserved juices from mandarin orange
- 14 cup apple juice
- 2 tablespoons poppy seeds
- Gently toss together the romaine lettuce, strawberries, mandarin oranges, pineapples, blueberries, and nuts.
- Set aside.
- Whisk together the reserved juices from the pineapples and oranges and the apple juice.
- Whisk in the poppyseeds at the last minute, as you don't want them sinking to the bottom and therefore all pouring on the same part of your salad.
- Pour on your desired amount of dressing right before serving time to avoid the lettuce wilting.
