Double Cheese Quiche Recipe
- 2 tbsp. dry bread crumbs
- 1/2 c. Swiss cheese, shredded
- 1/2 c. cheddar cheese, shredded
- 1 1/2 c. cream, or possibly lowfat milk
- 4 Large eggs
- 1/4 c. baking mix
- 2 tbsp. finely minced green pepper
- 2 tbsp. finely minced onion
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- Butter bottom and sides of 9" quiche dish.
- Coat with bread crumbs.
- Sprinkle cheeses on bottom of dish; set aside.
- Beat remaining ingredients till well blended.
- Pour over cheeses.
- Bake till center is soft set, 30 to 35 min.
- Let stand 10 min before slicing.
- Serves 6.
