Roasted Vegetables
- 1 whole cauliflower, broken up into florets
- 1 or 2 yellow squash and green zucchini, quartered
- 8 garlic cloves, sliced
- 1 packages cherry tomatoes, left whole
- 1/2 each red, yellow, orange bell peppers, sliced
- 1 cup olive oil
- 2 tbsp fresh thyme & rosemary
- Preheat oven to 350
- Place all vegetables in a large bowl, pour in olive oil, fresh herbs, salt & pepper.
- Bake 45 minutes to 1 hour.
