Quinoa Jambalaya

  1. Heat oil in a pan over medium heat.
  2. When hot, cook chicken.
  3. After chicken has cooked through, add peppers and onions.
  4. Cook until the onions are translucent.
  5. Add the tomatoes, kielbasa, seasonings and broth.
  6. Bring to a boil.
  7. Once youve got it simmering, stir in the quinoa.
  8. Cover and reduce heat to low, keeping it simmering slightly.
  9. Let it simmer for about 15-20 minutes until most of the liquid is absorbed.
  10. Voila!
  11. You have a tasty, healthy dinner!
