Quinoa Jambalaya
- 4 whole Boneless Skinless Chicken Breasts Chopped Into Bite Size Pieces
- 2 Tablespoons Olive Oil
- 1 whole Medium Green Pepper, Chopped
- 1 whole Medium To Large Onion, Chopped
- 1 can (28 Oz. Size) Diced Tomatoes
- 2 packages (about 14 To 16 Oz. Size) Turkey Kielbasa, Chopped Or Sliced
- 1 package (about 1 Oz. Packet) Jambalaya Seasoning Of Choice (I Use McCormick)
- 4 cups Chicken Broth
- 2 cups Quinoa
- Heat oil in a pan over medium heat.
- When hot, cook chicken.
- After chicken has cooked through, add peppers and onions.
- Cook until the onions are translucent.
- Add the tomatoes, kielbasa, seasonings and broth.
- Bring to a boil.
- Once youve got it simmering, stir in the quinoa.
- Cover and reduce heat to low, keeping it simmering slightly.
- Let it simmer for about 15-20 minutes until most of the liquid is absorbed.
- Voila!
- You have a tasty, healthy dinner!
