Green Heron Inn Buttermilk Coffee Cake Recipe
- 2 1/2 c. flour
- 1 c. sugar
- 3/4 c. brown sugar
- 3/4 c. salad oil
- 1 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 1/2 c. walnuts, minced
- 1/2 teaspoon cinnamon
- 1 c. buttermilk
- 2 Large eggs, slightly beaten
- 1 teaspoon baking pwdr
- 1 teaspoon soda
- Preheat oven to 350 degrees.
- Grease a 9 x 13 inch baking pan.
- In a large mixing bowl, combine the first 6 ingredients; mix well.
- Reserve 1/2 c. of this mix and toss it with the walnuts and cinnamon in a small bowl.
- Set aside to use as a topping.
- Then to the original mixing bowl, add in the buttermilk, Large eggs, baking pwdr and soda.
- Blend thoroughly.
- Pour into the greased baking pan and sprinkle the topping over the batter.
- Bake at 350 degrees for about 30 min or possibly till it tests done.
- Cold slightly and serve hot.
- Note: This is my favorite coffee cake recipe.
