Orange Glazed Ham with 2 Sauces

  1. Melt the butter in a medium saucepan over a medium flame, add sugar and cook over a low heat until sugar is dissolved and mixture is syrupy.
  2. Stir in orange zest, 3/4 cup orange juice, dressing and Grand Marnier, bring to the boil over a high heat and simmer for 3-4 minutes or until glaze has slightly thickened.
  3. Set aside approx 2/3 of glaze to use as a serving sauce.
  4. Remove the rind from the ham by gently using your fingertips to ease the rind away from the fat.
  5. Using a sharp knife, score the fat by cutting diagonally at 5cm intervals to form a diamond pattern.
  6. Stud each diamond with a clove.
  7. Place ham onto a roasting rack in a baking dish.
  8. Brush liberally with glaze.
  9. Bake in oven 180C for 25 minutes brushing with glaze during cooking time.
  10. While ham is cooking reheat reserved glaze and stir through the chives.
  11. In a medium bowl combine Philly*, sour cream and mustard, mixing well.
  12. Serve ham sliced hot or cold with Orange Sauce and Mustard Cream.
