Pineapple Chicken
- 1 cup juice-packed pineapple, drained
- 14 cup low sodium soy sauce
- 3 tablespoons wine vinegar
- 1 teaspoon dry mustard
- 1 tablespoon minced fresh ginger
- 4 chicken breasts, skin and fat removed
- 2 cups sliced fresh mushrooms
- 1 green pepper, seeded and cut into 1-inch chunks
- 1 red bell pepper, seeded and cut into 1-inch chunks
- 4 green onions, sliced into 1-inch pieces
- Combine pineapple, say sauce, vinegar, mustard, and ginger.
- Arrange chicken breats and begetables in a baking dish coated with cooking spray.
- Pour sauce over.
- Cover with foil and bake at 325 degrees for 30 to 40 minutes or until chicken is done.
