Hot Brown
- 2 oz butter
- 2 oz flour
- 1 quart heavy cream
- 1/2 cup pecorino romano cheese
- 14 oz roasted turkey breast
- 2 slice Texas toast, crusts trimmed
- 4 slice crispy bacon
- 2 roma tomatoes
- 1 salt & pepper to taste
- 1 paprika & parsley to taste
- In a 2 Qt.
- saucepan, melt butter and slowly whisk in flour until it forms a thick paste.
- Continue to cook on med heat for 2 minutes, stirring frequently.
- Whisk heavy cream into mixture, bring to simmer.
- Remove sauce from heat and slowly whisk in pecorino romano cheese until the Mornay sauce is smooth, salt and pepper.
- Assemble Brown using turkey, bacon, texas toast.
- Place in oven until cheese is brown and melted.
