Bite Sized Eclairs Recipe
- 1 pkt Vanilla pudding mix (instant)
- 1 1/2 c. Lowfat milk
- 1/2 c. Heavy cream
- 2 Tbsp. Powdered sugar
- 1/2 tsp Vanilla
- 1/2 c. Water
- 1/8 tsp Salt
- 1/4 c. Butter
- 1/2 c. Flour
- 2 x Large eggs
- 1/2 c. Chocolate chips
- 1 Tbsp. Shortening
- 1 Tbsp. Corn syrup
- 1 1/2 tsp Lowfat milk
- For filling: Mix dry pudding and lowfat milk and refrigeratefor one hour.
- Beat
- whipping cream, powdered sugar, and vanilla 'til stiff.
- Fold into pudding mix.
- Chill several hrs.
- For Cream puffs: Bring water, salt and butter to boil over medium heat.
- Remove and add in flour.
- Mix well.
- Return to low heat, stirring constantly, till mix pulls away from side of pan and forms a ball.
- Beat in Large eggs one at a time 'til well mixed.
- Drop dough from tsp.
- onto greased cookie sheet and bake at 350 degrees for 30 min.
- Puffs will look "dry" when done.
- For Topping: Mix all ingredients in a double boiler till chocolate melts.
- Keep hot.
- Slice through puffs horizontally and add in about a Tbsp.
- of filling.
- Take remaining cap and drag through topping.
- Place on filled puff.
- Must be refrigerated before serving.
- Best if made same day as
- needed - otherwise they get soggy.
