Black Bean Soup (Altered from Kraft Foods)

  1. Cook onion, garlic, cumin and pepper flakes in oil in a large pot on medium heat for 3 minutes or until onion is tender; remove from heat.
  2. Place 2 of the cans of beans with liquid in batches with broth in blender; cover.
  3. Blend until pureed.
  4. Stir into pot with onion mixture.
  5. Stir in remaining beans, salsa and lime juice.
  6. Heat the mixture to a boil.
  7. Reduce heat to low.
  8. Simmer 30 minutes.
  9. Ladle 1 cup soup into each bowl; top with dollop of yogurt or cheese.
  10. Serve with crackers.
