Red Onion Jam

  1. In a sauce pan, heat oil just til it barely starts to smoke.
  2. Add onion and season.
  3. Cook for 3 to 5 minutes.
  4. Add red wine.
  5. Lower heat and cook til wine reduces completly.
  6. Leave on low heat while making dressing.
  7. In smaller pan, heat honey til it's bubble and froth.
  8. Cook til it turns caramel color, about 2 to 3 minutes.
  9. Add the vinegar and simmer a few minutes.
  10. Shut off heat.
  11. Pour honey mixture over onions and continue cooking over low heat til juice is absorbed and onions are like jam.
  12. Put in a bowl to cool and serve.
