Potato Pancakes
- 14 cup shortening
- 2 eggs
- 14 cup milk
- 2 cups finely shredded raw potatoes, well drained and squeezed to get moisture out
- 14 cup Bisquick
- 1 teaspoon salt
- 12 teaspoon pepper
- 12 teaspoon garlic powder
- Melt shortening in large skillet.
- Beat eggs with whisk until fluffy; stir in milk, potatoes, baking mix, salt, pepper and garlic powder.
- Drop mixture by tablespoonfuls into hot shortening.
- Cook about 3 minutes on each side or until golden brown.
- Serve with Grilled Franks, Coleslaw and Apricot Jam Cake.
