Potato Pancakes

  1. Melt shortening in large skillet.
  2. Beat eggs with whisk until fluffy; stir in milk, potatoes, baking mix, salt, pepper and garlic powder.
  3. Drop mixture by tablespoonfuls into hot shortening.
  4. Cook about 3 minutes on each side or until golden brown.
  5. Serve with Grilled Franks, Coleslaw and Apricot Jam Cake.
