Baked Parmesan Artichoke Chicken
- 2 cans (about 14 Oz. Size) Artichoke Hearts, Chopped
- 1/2 cups Light Mayonnaise
- 3/4 cups Parmesan Cheese, Grated
- 1 Tablespoon Garlic Powder (or Finely Chopped...in Which Case Use 2 Cloves)
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 3 whole Chicken Breasts
- Preheat oven to 375 degrees F.
- Combine all of the ingredients (except chicken) together in a large bowl, making sure that its evenly mixed.
- Place rinsed, raw chicken breasts into a casserole dish.
- Cover chicken breasts with the entire mixture, spreading enough to coat each piece of chicken.
- Place into the oven for 40 minutes, or until the mixture is bubbling nicely in the pan and has begun to turn golden brown.
- Enjoy!
