Chile Mashed Potatoes
- 6 Idaho potatoes, peeled
- 1/2 cup butter
- 1 cup heavy whipping cream, warm
- 2 roasted poblanos, peeled, seeded, and diced
- Salt and pepper
- Preheat the oven to 350 degrees.
- Boil the potatoes in salted water for 15 minutes, or until tender.
- Drain, place on a sheet pan, and bake at 350 degrees for 10 minutes.
- Remove the potatoes from the oven and transfer to a large bowl.
- Add the butter to the bowl and mix with an electric mixer until smooth.
- Add the cream until it reaches the desired consistency.
- Stir in the poblanos and season to taste with salt and pepper.
